    Microwave sponge pudding

    This is brilliant if you have unexpected guests turning up and no pudding prepared – a very light sponge.

    You will need a 1 ltr pudding basin (greased if it’s glass or china)
    4oz (100g) margarine – 4oz (100g) caster sugar – 2 small beaten eggs – 4oz (100g) S.R. flour, sifted with a pinch salt – 1-2 tablespoons hot water

    Cream Marg and sugar until light & fluffy – add beaten eggs (with a little of the flour to prevent curdling) and beat well – fold in the flour – add enough hot water to make a soft dropping consistency

    Either put 3 tblspns syrup in bottom of basin OR add a handful of sultanas to mix OR add some glacé cherries and a few drops of almond essence to mix

    Spoon prepared mixture in the basin, cover with cling film and pierce a hole in the top to allow steam to escape – heat on full power for 41/2-5 minutes. leave to stand in bowl for 5 minutes before inverting onto a serving dish.
    I find if I leave the bowl in place after inverting it reheats very well for a minute. (If using syrup the bottom looks a bit gooey) :good:
