Apple Cake
100g/4oz Butter or margarine – 100g/4oz caster sugar
2 eggs, beaten – 175g/6oz self-raising flour (if using Farine pour gateaux I normally add half teaspoon baking powder) – pinch salt – good pinch ground cinnamon (optional) – 2 or 3 tablespoons stewed or grated raw apple.
Cream fat with sugar – beat in eggs – sift in flour, salt and cinnamon (if using + baking powder, if using) Stir in the apple.
If raw apple used may need to add a little water to make a soft dropping consistency.
Turn into greased and lined 18cm/7″ cake tin – bake in preheated oven 180 degree C/350 degree F/Gas mark 4. For approx 40 mins
Alternatively, mix can be baked in bun cases – time reduced to 15 minutes.
Makes a very light, moist cake.
Definitely make this one, apple cake is my all time favourite, thanks Fruitcake !
Forgot to add that I sometimes throw a handful of sultanas in and sometimes finish it with a drizzle of glacé icing.
