    This is my late mother in law’s recipe. I make it all the time as it’s easy and always works out well. It keeps for a few weeks. Just slice and spread with butter  :-)

    3/4 lb dried mixed fruit (I use sultanas and orange peel if I can find it)
    1/2 lb sugar
    1 large cup/mug hot tea
    2 ozs butter
    1 egg well beaten
    2 tablespoons marmalade
    1 lb self-raising flour (i just add one raising sachet to the flour)
    1 teasp mixed spice
    pinch of salt

    soak fruit and sugar in tea overnight
    mix flour and butter and add spices
    beat egg with marmalade
    add all together and mix well
    cook for 1.5 -1.75 hrs in a moderate oven

    I put it in 2 loaf tins

    Blue velvet – after what happened to yours I kept a close eye on mine and found they only took 50 mins at fan 160 I turned it down to 150 for the last 10 mins or so as they were getting quite brown! Guess it depends on your oven   :cry: :-)

    P.s Also didn’t have 2 loaf tins so did one in a round cake tin so wasn’t so deep so perhaps that made it cook faster

    Thanks Jackie, I was so disappointed. Will take that on board. Fan ovens, I forgot you should reduce the heat  by 10/20 degrees!  To use Tigre,’s cooking term , I will chuck some marmalade in too!  :rose:
