    (Apologies if you’ve seen this on UIF, but not everyone will)

    For when you start getting the Christmas recipes on the way here’s the recipe I use for the mincemeat for mince pies: –

    450g mixed dried fruit

    225g stoned dates – chopped into small pieces

    225g n0-need-to-soak apricots – chopped as for dates

    575g cooking apples (I use Granny Smith as haven’t access to Bramley apples)

    1 teaspoon each of ground ginger, cinnamon and nutmeg

    440ml Guiness

    5 tablespoons whisky

    Put all ingredients, except the whisky, in a pan and bring to the boil, cover and simmer for about 20mins or until the apple is cooked, stirring occasionally to prevent sticking.

    Cool slightly and stir in the whisky.

    Either spoon into sterilised jars, seal, cool and store in fridge until required (will keep for 1 month)

    Or –  Pack in freezer containers and freeze (use within 6 months) :yes:

    Sounds really good F, but will have to get another whiskey, only have “Monkey Shoulder” in, I can’t use that for cooking, not even a teaspooon ;-)

    Fruitcake that sounds very moorish, I’ve used our Delia’s receipes before which is good, this one sounds very good will give it a try. Thank you :rose:
