    Chocolate cake

    Mix well together 11oz chocolate nut spread (like Nutella) 4 oz S.R. flour and 3 beaten eggs bake in a lined 8″ round tin for 35-40 mins at mark 4. Cool for 10 mins in the tin then turn onto a wire rack.

    Weetabix cake

    Place in a large bowl 4 crushed Weetabix, 3 oz dried fruit, 7oz brown sugar, 3 0z ready to eat apricots, chopped, and half pint milk, leave to stand for about an hour. After standing (not you the mixture!) stir in 2 beaten eggs and 8 oz S.R. flour.Bake in a lined loaf tin for about one and a half hours, or until firm at mark 4.

    Apricot and almond tray-bake

    Cream together 9 oz softened butter and 8 oz golden caster sugar (I use pure canne) mix in 10 oz S.R flour, 2 tspn baking powder, finely grated zest of one orange, 2 tbsp orange juice and 5 beaten eggs. Fold in 8 oz ready to eat dried apricots, chopped. Put into a greased and lined 13″ x 8″ baking tin, scatter 1 oz flaked almonds over and bake at mark 4 for about 30 -40 mins until risen and golden brown. leave to cool in tin and cut into bars (about 18, but depends on how bit the bars!)

    Forgot to say that, as it’s fat free, you can use soya milk in the Weetabix cake so that it’s dairy free and the chocolate cake can be split and filled with any filling of your choice, or just coat the top with chocolate icing.

    Edit to the original post it should say ‘how big the bars’ !!

    Thank you so much FC. The recipes sound rather apealing and I will be trying them. The less fat free the better though. The Weetabix recipe sounds like the best way to eat it that I have come across.

    Sadly some friends unexpectedly arrived today and demolished the Malt Loaf!

    I think I’d have a job with one piece! I can imagine a real chocoholic having a job with containing themselves though!
