This morning I had an hour free before going to shuffle horse poo around.
    So I baked a cake.
    Lemon and sultana sponge.
I can do it with my eyes closed.
And today I think I did.
Nice gloopy mix into the tin.
    Oven preheated.
    Pop the tin in.
    And forty mins to wait.
    Duly waited.
Open oven door, step back to let glasses clear.
    And the oven is empty.
I even bend down to look to the back of the oven.
    No cake.
But nestling on the bottom shelf of the fridge is a rather nicely chilled tin of cake mix.

As long as the Merlot isn’t in the fridge or the oven, but open and breathing nicely waiting to be poured,  take comfort Stinky, you haven’t lost the plot!! (well, not quite!)

The other day I made a coconut flan, without coconut …. I found the coconut waiting in the scale when I took the flan out of the oven
