    here is one of our favourite recipes for a Tajine

    left over lamb from a joint – use enough for however many people u are feeding ( if using fresh lamb brown it along with ingredients below before putting in the slow cooker if using one)
    4 tbsp olive oil
    3 tbsp runny honey
    2 tsp powdered cannelle – cinammon
    1 tsp powdered ginger
    1/2 tsp turmeric
    1-2 onions diced
    1 – 2 cloves garlic – crushed

    put all these ingredients in a bowl and leave to marinate for at least 30mins

    Then you can either cook on the hob or in a slow cooker. Put all the ingredients from the bowl either in a pan or in the slow cooker. Add 1 can of tomatoes and 1/2 litre of stock or enough to cover the meat etc then add dried chopped prunes and apricots. Boil if in a pan and leave to cook on low for 1 to 2 hours topping up water if neccessary – do not need to do this if in the slow cooker.
    seve with the rice you like.

    Sounds delicious Andrea. I usually put  my old tajine on the gas bbq and leave it to simmer away for a couple of hours or so. I usually put the barbie under the garage door away from breezes and showers etc. I’ve never eaten rice with it as I prefer couscous but I may give rice a try too.
